A Weekend of R&R

Two weekends ago we went away for some much needed R&R to a water park. It was a good time and my hubby suggested it so we packed up a few bags and headed north to the Radisson Hotel & Water Park of America. I am sad I didn't actually get pics inside the water park but I was a little nervous to take my camera by the water because I was getting in the pools too! But we did drive into the cities and I got some nice pics of city scenes.

The thinkings of a two-year-old

I had to blog this before I forgot:
Sitting with my toddler after her long nap, she looks at me with a smirk. I ask her what honey?
She says I was thinking you were pretty.
Tears!!!
We has a hard morning and she was into everything, even pulling some buttons off my laptop! I did get it fixed after she took her nap.
I was frustrated but after nap time and spending quiet time with the Lord I feel renewed and I think she did after her nap. She melts my heart, with the things she says out of the blue!!!

Easy-er Lasagna

This is an easier version of lasagna but still kinda takes time.
You will need:
A pound of ground beef or mild Italian sausage
A box of no bake lasagna noodles
2 packages of 1/3 less fat cream cheese softened
2cups mozzarella cheese
2 cups Italian blend cheese
2 jars of your fav red sauce
2 eggs
13x9 pan

You will need to brown and season to taste your meat of choice and drain it. Preheat your oven to 375 & spray your baking dish with non stick spray. Then beat the eggs and add the cream cheese. I use a hand mixer or my kitchen aid for this part. Then add 1 cup of mozzarella and half cup Italian blend & mix. Then put some of your sauce in the bottom of your 13x9. Place 4 no boil noodles on top a little overlapping each other. Then spread a little of the mix on the noodles. Add half the meat and a little sauce. Put more noodles on top that with some of the mix and some sauce in this layer. The next layer will be noodles, the rest of the meat and mixture plus sauce and some mozzarella cheese. The last layer will be noodles, rest of sauce and rest of Italian cheese. Cover with foil, place on baking sheet to protect against boiling over and bake for one hour. Serve with a green veggie or salad and garlic bread and voilá! Dinner! The part that's easier for me is the no boil noodles! I sometimes add peppers and other veggies to change it up and sneak in extra veggies ;)

Ps this *basic recipe is on the back of the box for the noodles but withy own twist, for example I used beef and sausage and cream cheese instead of ricotta.

New (to us) van

We got a new minivan last week! It is really nice. God sure knew what he was doing! I will tell you now I wanted a suburban or something similar=more room! But God had a different idea! So we went and looked at a car lot where we know someone who is very honest. We have bought a van from him before and it was a great car! So we went and looked. I was not impressed. Sorry to be honest! Anyway it was clean and rust free. My hubby tells me that this couple who goes to our church brought it in as a trade. That got my attention :) they took very good care of their van and it has low miles so I start thinking. Hmmm maybe this is the car God has in mind for our family. The more I think about it the more I realize that this is it. From the couple who goes to our church and from the car salesman who also goes to our church to us, the car was meant for us! You know what? It is very nice and I feel blessed to be driving around my kids in that car! God knows what is best and maybe some year we will get a suburban but for now we have what we need :)
