Planning...

I do believe we are going to plan our VERY first camping trip as Midwest dwellers! First we have to see if the tents we have work (we have never used them!) But there is murmurings! SOO if we do go I will keep yall posted! :)

just another day

hello everyone!
this week started out not so good
my toddler caught hand foot and mouth from somewhere
its going around here..
we have a pretty active social life and have many friends
many of those friends have sick kids right now
its a part of life right?!?

it is a hard one to witness 
because the first night she had a bad fever 
second night was fever and thrashing about crying out about her feet 
hurting itching burning
like there was sand in her toes
that's how she described it
during the day it was lots of tears and fussiness
except when we went outside to watch daddy play softball
i regret taking her to that though because that night we were up till 3am
last night she slept well to make up for the last 2 nights she didn't
PRAISE GOD!
everyone has had a fever at least once but then nothing else 
so maybe we are over this soon!
i have been using essential oils to sooth her symptoms
its only been one day but i see improvements
or maybe its just running its course...

Summer Break & FAST recipe

Summer Break has started here for our school! YES!!! Some time with my kids and some late nights where no one has to get up early except my hubby {for work}!  Time to teach the older kids how to do laundry and chores. Hanging out with all my kids' friends and letting everyone hold the baby before he becomes a toddler. Time for deep conversations that are not clouded by the politics of school drama. Yes we do have some conversations that are deep, not many but a few and I notice they come with the freedom of summer time.  Oh how I love summer!!! 

you guys ready for a recipe??
My family LOVES spaghetti carbonara! ever had it? if not your  missing out! creamy smooth cheese sauce with noodles and bacon and freshly cracked pepper! Ok now I am getting hungry! 
so i took this recipe and modified it a little and now we have chicken carbonara!

one pound boneless skinless chicken breast sliced thinly( slice when slightly frozen for better results!)
one pound of thin spaghetti
one tomato (optional)
1/2 pound bacon sliced and cooked and cooling on paper towels
one can of cream of mushroom soup
splash of milk

boil noodles in very salty water...(Italians say it should be like the water of the sea)
leave a nice thin layer of the bacon fat in the bottom of your pan and add chicken and cook till done 
add tomato milk and soup and stir till combined
when the noodles are done (Al dente) add them and toss to coat.
serve with a side salad and top with bacon as a garnish and if you like some shredded cheese like my hubby did ;)

this meal was SO fast! I love when meals come together this quick!

ps if it seems really stiff or thick add more milk to make the sauce creamier.

Modge podge

My little kids have been sick as of lately and my toddler isn't in her best form. Poor dear! Last night I cought her with some bright pink nail polish painting her nails, the dresser and her bed. Imagine her shock and protest when I took it from her and laid her back in her bed! Today I will {hopefully} be able to get that pretty polish off. Did I mention that the dresser is white?


Yesterday we made eggs in toast. So good and it will get my toddler to eat.
Take your price of bread and with a cookie cutter, cut out the center of the bread. Melt some butter in your fav egg pan. Place your bread on the pan and crack an egg into the middle. Cook until its done! That's it! You can also toast up the price of bread you cut out. This simple little thing can make the people you love so much, happier when they are not feeling well :)

Italian Wedding Soup

I saw this recipe and thought yum!
You need :
Meatballs- 1lbs of lean ground beef or turkey
1/2 cup Italian breadcrumbs
1egg
1/2 cup BBQ sauce
1/4cup grated parm cheese

Preheat oven to 350
Mix all that together and form small
Meatball and line on a cookie sheet
Bake in oven 15 min

Next:
Orzo pasta
8 cups chicken broth
Garlic minced 1-2 cloves
Salt & pepper, to taste
One bag spinach
Parmesan cheese
One onion thinly sliced

Next you'll need 8 cups of chicken broth. Bring that to a boil and add some minced garlic (1-2 cloves or tbsp) season to taste with salt & pepper. Meanwhile thinly slice an onion and sweat it in a pan with extra Virgin olive oil and butter till tender and transparent. When the broth boils add your orzo pasta to the pan. I used a half of a package. It was good ratio to the broth. When the pasta boils for about 8 min the meatballs should be ready. Let them sit for a min and add to the broth. Turn it down to medium low heat. The original recipe calls for escarole but I used spinach (a whole bag) sliced up and added in the last few minutes of cooking. Also add your onions! Serve in a large colorful bowl! Add some grated Parmesan cheese and enjoy!
